Ingredients

Almond Pulp (about 1 cup)

4 dates – pitted

½ cup of goji berries

1 banana

¼ cup shredded coconut

2 tbsp. coconut oil

pinch of cinnamon or nutmeg

2 drops of stevia or 1 tbsp. of maple syrup (optional)

Directions 

Place all ingredients into a high-powered blender. Blend until the ingredients are well incorporated. I like to leave my mixture a little chunky.

One option is to dehydrate the cookies in the dehydrator. If you are using a dehydrator, take a small amount of the blended cookie mixture and form into a ball and press into a cookie shape and place on a the dehydrator tray. Dehydrate for approximately 12 hours at about 120 degrees.

Another option if you do not have a lot of time, is to bake the cookies in the oven. Take a small amount of the blended cookie mixture and form into a ball and press into a cookie shape and place on a cookie sheet lined with parchment paper.

Makes approximately 15 cookies. Bake the cookies at 350 degrees Fahrenheit for about 10-12 minutes.
