2 cups of cooked lentils (I prefer sprouted lentils)

1 ¼ cup of kidney beans (today I used a can of kidney beans Eden is my favorite no salt added and the tin can is BPA free)

½ shredded carrots

2 cloves of garlic

1 egg

1 cup shredded cheese

½ cup marinara sauce

¼ cup of bread crumbs

Directions

Mix all of the above noted ingredients in a food processor or blender;

Place the mixture into a loaf baking pan and bake for 50 minutes at 375 degrees; Once the loaf has cooled …EAT! Sometimes I take a slice of the bean loaf and place it in a tortillia wrap with some tomatoes and avocado, or I have it with a salad and some grilled vegetables.

Note: In my house my kids love this—probably because they have no idea what they are eating!! For my son who is a picky eater, I spread approximately ¾ of a cup of the cooked bean loaf on a slice of bread, add some cheese and top with another slice of bread and viola! He devours it! Deception is okay – right???
