• 2 medium size cucumbers (halved down the length and seeded, therefore will have 4 cucumber boats)
  • 1 can of tuna, rinsed and drained
  • ¼ cup green onions
  • 1 tbsp fresh lemon juice
  • ¼ cup of celery, diced
  • ¼ cup of red pepper, diced
  • 2 tbsp of plain greek yogurt (option 3 tbsp mayonnaise)
  • Salt and pepper
  • 1/3 of a cup of fresh dill



  1. In a bowl, mix together the can of tuna, green onions, all of the lemon juice, celery, red pepper and yogurt and salt and pepper to taste.
  2. Fill each cucumber boat with as much of the tuna filling as desired, garnish with fresh dill (optional)
